Cabin Fever Featurette: Insert the second disc and on the [Main Menu] select the menu entry The Production. On the following page, highlight Development Hell Part 1 and then press the Right arrow key on your remote. This will highlight some slashes on the screen and give you access to "Cabin Fever", a 6-minute featurette about the shooting of Kelly Rowland fighting off Jason in the cabin.
Possible Alternate Ending?: Go to the Deleted Scenes menu, accessible from the disc's Main Menu. Once there, highlight the arrow pointing Right. Then, press the Up arrow key on your remote and a bloodsplatter will appear on the screen. Press Enter and you will be see a clip of the filmmakers discussing an alternate ending for the movie. 
Pre-Production Fight Scenes: Go to The Production and then select the Visual Effects Featurettes menu entry. On the following screen press the Right arrow key and some slash marks will appear. Press Enter and you will see the two Pre-Vis Fight Scenes "Put the dog to sleep" and "Man the torpedoes". They are computer generated versions of the fight scenes between Freddy and Jason the filmmakers created to pre-visualize the fight.
